Unfried Chicken

Yield: 4 servings
Nutritional Facts (per serving): 237 calories; 4.2 grams fat

1/2 cup Bread Crumbs
2 tablespoons Flour
1/2 teaspoons Salt
1/4 teaspoons Black Pepper
Pinch of Cayenne Pepper
1/8 teaspoon Garlic Powder
12 ounces Chicken Parts or 4 3-ounce Chicken Breast Halves
1/3 cup Nonfat Buttermilk

Preheat oven to 375 degrees. Combine first five ingredients. Dip chicken in buttermilk and then roll in crumb mixture. Place chicken on baking sheet sprayed with nonfat cooking spray, then spray the chicken with the cooking spray. Bake for 30 minutes.
   
   


   


Vegetable Cheese Pizza

Yield: 1 serving
Nutritional Facts (per serving): 350 calories; 9.5 grams fat

1 Pizza Round
2–4 tablespoons Pizza Sauce
Mushrooms, Onions, Tomato, Green Pepper, other Vegetables to taste
1 ounce Shredded Mozzarella Cheese
Oregano, Garlic, other Italian Spices to taste

Preheat oven to 400 degrees. Place pizza round on a sheet pan. Spread sauce over round and add chopped and diced vegetables. In separate bowl, combine cheese and spices. Place on top of vegetables. Bake about 12 minutes.
   
   


   


Blueberry Biscuits

Yield: 12 servings
Nutritional Facts (per biscuit): 125 calories; 3 grams of fat

2 cups Flour
3 tablespoons Sugar
2 teaspoons Baking Powder
1/4 teaspoon Baking Soda
1/4 teaspoon Salt
1/2 cup Fresh or Frozen, Thawed Blueberries
1 cup Skim Buttermilk
3 tablespoons plus one teaspoons Margarine, melted

Preheat oven to 450 degrees. Combine flour and next 4 ingredients and stir well. Add blueberries and toss gently. Combine buttermilk and melted margarine; add to dry ingredients and stir until dry ingredients are moistened. Drop dough by heaping tablespoons onto a baking sheet sprayed with vegetable spray. Bake at 450 degrees for 11 minutes or until golden brown.
   
   


   


Cocoa Brownies         


Yield: 16 squares
Nutritional Information (per square): 115 calories; 6 grams fat; 1 gram saturated fat

1/3 cup margarine
1/2 cup sugar
1/4 cup light corn syrup
2 teaspoons vanilla
1 whole egg
1 egg white
1/2 cup unsweetened cocoa
1/2 cup flour
1/4 teaspoons salt
1/2 cup chopped walnuts

Preheat oven to 350 degrees. Spray an 8-inch square baking pan with baking spray. Cream margarine and sugar in large bowl. Add corn syrup, vanilla, whole egg, egg white, and mix until well blended. Combine cocoa, flour, and salt and add slowly to batter. Fold in nuts and pour batter into pan. Bake 25 to 30 minutes or until toothpick inserted comes out clean.
